I have seen this soup going around on Pinterest! I loved the idea right at the start. Essentially this is a perfect meal for days you just can’t be bothered. It has only 5 ingredients!! (plus water), basically no prep, and is still hearty and filling to keep your belly full on a chilly day. Fall can be a busy time with this soup you will be able to make a delicious quick meal without having to order out!
BUSY DAY SOUP
Yield: 6 servings Prep Time: 5 minutes Cook Time: 1hr 25 minutes
- 1 lb ground beef
- 1 package onion soup mix
- 1 3/4 cup mixed frozen vegetables
- 5 cups of water
- 1 28oz can diced tomatoes
- 1 cup macaroni, uncooked
In a large soup pot, brown ground beef. Drain fat. Pour in water, onion soup mix and tomatoes with juice. Simmer for 1 hour on medium-low. Add macaroni and frozen vegetables. Cook 15 minutes longer on medium heat. Serve hot.
Yep, that’s it! those are the instructions. So simple! Be sure to check on it in case it needs some more water otherwise you are good to go! For added yum I sometimes top with pre-shredded mozzarella cheese and I serve with some crusty bread. Enjoy!
